If you want to test on mobile, expect to wait 5 minutes every time. I can change like a color on a material and then wait 5 minutes for like 900 shaders to compile. I've spent some time in Unreal, and the graphics are great, but unfortunately I spend most of the time just waiting for things to compile. It's also really easy to experiment and prototype with Godot, the editor loads fast, changes are in real-time. Mostly just the API docs, there are not as many tutorials in the docs like some other engines, but if you know what you are looking for, it's easy to find. The documentation is generally very good. I'd say Godot is the easiest out of the popular options.
